Hailing from LA via France, Montreal, and NYC, JJ Proville is a Seattle-based cook with a penchant for beautiful farmers' market produce, bold, rustic flavors and natural presentation. After some time spent in food writing (and receiving a nomination for a James Beard media award) he cooked at Manhattan's loved Gramercy Tavern and at Fort Defiance, Brooklyn's top cocktail bar. He is now at Seattle's Il Corvo and hopes to open a restaurant soon.
