You want to eat pulled pork but don’t have a grill. Don’t soil yourself. If you have a night to spare, and a big old cast iron pot, try this recipe. Very simple.

Purchase pork shoulder from the butcher. Just ask him or find it for yourself and point to it. If you are not sure how much you should get, either tell the butcher how many people you want it for, or alternatively just buy a nice big hunk and you'll freeze the rest for another day you want instant pulled pork. And in fact this last piece of advice is quite valuable, because freezer pulled pork is a beautiful thing. It thaws oh so quickly and man, does it make a good snack considering it took 8 hours to cook.

Ingredients

  • A Pork Shoulder
  • Apple cider vinegar
  • Yellow mustard
  • Hamburger buns
  • Spices for a rub..... such as paprika, brown sugar, chili powder, cayenne, salt, white and black pepper, onion and garlic powder

Method

Cooking the pork shoulder is stupidly simple. You simply spice it up, stick it in a cast iron pot or covered oven proof dish, switch on the oven to 200 degrees F and let it sit there with the lid on for as long as you can. The minimum if you are doing a siezable chunk is about 5 hours. (Don't bother browning or searing, theres no point. No oil or butter needed either.)

If you feel like taking the risk, leave it overnight in the oven. This is for the best results. In the morning you will find something quite amazing that comes apart upon being poked with a spoon. Otherwise, start it early in the day.

If you want to make an even bigger deal of it, marinate it in apple juice and spices for a day before you cook it.

 

For the South Carolina style Pulled Pork sauce: (And this is a great sauce)

Throw some chopped onions and garlic into a pot and sweat using butter. Add half a cup apple cider vinegar and turn the heat up. Reduce vinegar till the strong smell is gone. Add half of the yellow mustard bottle and mix, Add a tablespoon or two of brown or granulated sugar. Correct seasoning with salt and pepper.

To make the sandwiches, put pulled pork in buns and drizzle with sauce.
